Sivas İçli Meatballs, one of the most distinctive dishes of Sivas cuisine, differ from stuffed meatballs made in other regions of Turkey in both shape and preparation technique.

While stuffed meatballs in other regions are typically shaped like lemons or spindles, the Sivas stuffed meatball has a wide, flat structure. It is about the size of the palm of your hand and shaped like a round disk.

In Sivas, içli meatballs are usually cooked by boiling them in salted water. This results in a lighter dish compared to frying.

They are always served with a generous pour of hot, melted butter. In some recipes, a small amount of tomato paste or paprika is also added to this butter.

On Sivas dining tables, the best accompaniment to stuffed meatballs is usually ice-cold ayran or a cacık made with strained yogurt. It also pairs wonderfully with Sivas’s famous peskütan soup.
