Sivas pastirma, registered by the Turkish Patent and Trademark Office in 2022, is one of the most valuable treasures of the city’s culinary culture. There are very specific production methods that make Sivas pastirma special for gourmets.
For pastırma production, the back and tenderloin cuts of calves raised on Sivas pastures are preferred. It is considered ideal for the meat to be completely free of sinew and for the fat to be marbled throughout the meat like marble.
Sivas master butchers recommend slicing the pastırma paper-thin with a knife to fully appreciate its flavor. It can be enjoyed on its own for breakfast, or used as the main flavor element in Sivas’s famous pastırma with eggs or dried beans.
