Sivas Kebab

Cooked in open brick ovens (tandoor-style) with a magnificent blend of lamb, eggplant, tomatoes, and peppers, this is one of Sivas’s most famous registered market and regional delicacies. Although it is known for its similarity to Tokat kebab, it has its own unique character due to the absence of potatoes and the way the meat is marinated.
